No-Bake Montmorency Tart Cherry Cheesecake

The holidays aren't the same without lots of red and our No-bake Montmorency Cheesecake made with U.S-grown Montmorency tart cherries is a delicious and decadent way to finish off your holiday celebration. Try it tonight!

Ingredients

  • 2 cups fine graham cracker crumbs (about 15 full graham crackers)

  • 2 tablespoons granulated sugar

  • 1 stick (1/2 cup) unsalted butter, melted and cooled

  • 16 ounces (2 bricks) cream cheese, room temperature

  • 3/4 cup powdered sugar

  • 2/3 full fat sour cream

  • 1/4 cup Montmorency Tart Cherry Concentrate

  • 1 teaspoon pure vanilla extract

  • pinch of salt

  • 1 cup heavy whipping cream, whipped to stiff peaks (total of 2 cups of whipped cream)

  • 1 can Montmorency Tart Cherry Pie Filling

Directions
In a large bowl, stir together graham cracker crumbs, granulated sugar, and melted butter until evenly moistened. Pour into the bottom of a lightly greased 10-inch spring form pan.  Press crumbs firmly with your fingers or the bottom of a dry measuring cup evenly along the bottom and 1 inch up the sides of the pan. Chill while preparing the filling.

Beat cream cheese with an electric mixer on high until soft and creamy. Add powdered sugar, sour cream, Montmorency Tart Cherry Concentrate, vanilla, and salt. Beat until smooth and no lumps remain.

Using a rubber spatula, gently fold in whipped cream until the mixture is even. Spread into prepared crust smoothing the top with a spatula. Cover and chill for at least 4 hours or overnight. Top the cheesecake with Montmorency Tart Cherry Pie filling before slicing and serving.
